Are you constantly torn between eating healthy and being lazy? It can’t be just me people, be honest. At the end of a long day, the last thing I want to do is spend a bunch of time in the kitchen. I just want to binge watch Casual on my couch – that’s it. That’s where these quick go-to recipes come in.
Breakfast for dinner is always a good idea in my book. Always. So I love making Vegetable Hash with a Poached egg. It’s quick, it’s healthy, and it has a bunch of protein. The recipe makes four servings, which basically means that you will have veggies left over and can have dinner the next day in the time that it takes to poach an egg (less than 3 minutes).
If you need something more substantial, no problem – that is where quinoa comes in. The recipe is technically a side dish, but I am an adult and can eat a side dish for dinner if I want – and I want to often. This Quinoa Salad with Asparagus, Dates, and Orange is just the right amount of sweet to taste like a treat, but still be healthy. If you want, the salad is a great base for a variety of proteins. Remember, you are an adult, you can add what you want.
Bottom Line: It’s ok to be lazy, it’s not ok to eat out for every meal.
