It finally feels like Fall in LA and it is getting cold, so bring on the hot dinners. I love risotto, I always have, there are countless variations and I love them all. I came across this recipe for Southwest Pumpkin Risotto and fell in love.
This is an amazing mix of a traditional Italian dish with a Mexican twist. The spices are amazing, and the addition of pumpkin is a perfect nod to fall. Added bonus, it is perfect for Meatless Monday, if you’re in to that sort of thing.
Bottom line: I love fall.
