Since I heard from so many of you that you liked the vegan soup recipe, I thought I would share another meatless meal and is delicious. I promise, you won’t even miss the meat.
Today’s recipe is courtesy of PureWow. It is stuffed eggplant and it is delicious. I made it for a friend and me earlier this week and it was easy and delicious. If you are wondering why I am using the PureWow photo instead of my own since I just made it, the answer should be obvious – mine did not look nearly as pretty. It wasn’t like pinterest fail bad, but it seemed like a good idea to stick to the professional photo.
This recipe takes less than an hour from prep to table, which is coincidentally the same amount of time that it takes to drink one bottle of pinot and describe 2 horrible dates. Get the full recipe here.
Bottom Line: If you have a toaster oven, use that because heating an oven to 400 degrees when it is 100 degrees outside is dumb.
