My Favorite Summer Fruit and Veggie Recipes

Living in LA is an eternal summer of sorts.  However, it’s right about now when the summer fruits and vegetables start crowding the farmers markets.  Berries, I am looking at you.  Here are some of my favorite summer fruit and veggie recipes.

First up: Berries.  There really isn’t anything that berries can’t make better.  Here are 101 berry recipes, but my all time favorite will always be the strawberry shortcake.




Next: Cucumbers.  I recently went to an eastern medicine doctor to find out my constitution (yes, I will do a full post on this soon) and I found out that I cannot eat leafy green vegetables, but I LOVE salad.  What is a girl to do? Make salad without leafy greens.  This one is super simple to make and is downright delicious.

You can get the official recipe here, but I just chop up a few grape tomatoes, cucumbers and avocado.  Mix them all together, add a splash of olive oil and balsamic and sprinkle with feta.



Next up: peaches.  My favorite stone fruit.  It doesn’t get better than grilled peaches and burrata.

Grilled Corn With Cheese and Lime And finally: Corn.  A summer is not complete without eating corn on the cob.  And if you are going to do it, you might as well do it right.  Here is a recipe for Grilled Corn on the Cob with Cheese and Lime.






Bottom Line: It’s SUMMER! Go eat like it!

(also, apparently everything tastes better with cheese)

    You don’t eat leafy greens?? I’m going to need to know more about this constitution of yours…
    Also, that peach and bursts recipe looks amazing. Looks like I’m heading to a market after work 🙂

      Ha! Yes, I will explain more in a future post. In the meantime, picking up some peaches is a must!
