Living in LA is an eternal summer of sorts. However, it’s right about now when the summer fruits and vegetables start crowding the farmers markets. Berries, I am looking at you. Here are some of my favorite summer fruit and veggie recipes.
Next: Cucumbers. I recently went to an eastern medicine doctor to find out my constitution (yes, I will do a full post on this soon) and I found out that I cannot eat leafy green vegetables, but I LOVE salad. What is a girl to do? Make salad without leafy greens. This one is super simple to make and is downright delicious.
You can get the official recipe here, but I just chop up a few grape tomatoes, cucumbers and avocado. Mix them all together, add a splash of olive oil and balsamic and sprinkle with feta.
Next up: peaches. My favorite stone fruit. It doesn’t get better than grilled peaches and burrata.
Doesn’t that just look magical?? Get the recipe here, and thank me in the comments 😉
And finally: Corn. A summer is not complete without eating corn on the cob. And if you are going to do it, you might as well do it right. Here is a recipe for Grilled Corn on the Cob with Cheese and Lime.
Bottom Line: It’s SUMMER! Go eat like it!
(also, apparently everything tastes better with cheese)
