I have been trying to only eat foods with ingredients that my 5-year-old niece can pronounce. That, unfortunately, means that I have to do a lot more cooking than before. But that does not mean that I have the time or the patience to cook for hours. Thankfully, with 3 ingredients and a Blendtec, I can have delicious hummus in about 6 minutes…including clean up.
- 2 cans of garbanzo beans
- 1/2 cup Extra Virgin Olive Oil
- 1 Lemon
- Salt and pepper to taste
Pour the olive oil into the blender. Zest and juice the lemon, add both to the blender. Drain and rinse the canned garbanzo beans and add them to the blender.
Press start. Yes, it’s that easy.
And, you have just made a delicious snack in minutes. Using the recipe above as a base for basic hummus, you can modify it to your liking. If you want roasted red pepper hummus, add roasted red peppers to the recipe above. If you want garlic hummus, add fresh garlic cloves to the recipe. I think you get the idea.
Bottom line: Always have garbanzo beans and lemon in the house. You never know when you will have spontaneous hungry guests.
