It is starting to feel like fall (even in Los Angeles). And when it is chilly outside, you should get chili inside your belly. While my mom makes the best chili ever – seriously it is delicious, I have tried to recreate it without success – this recipe is completely different and pretty darn good. Added bonus, it is meatless, so yet another meatless Monday meal for your arsenal.

Ok, so maybe it isn’t technically toast – but, when you don’t eat rice, wheat, or corn (I know, right??) anything that even resembles toast is exciting. Especially when said toast is merely a vehicle for avocado. One thing that I really miss from my bread eating days is avocado toast. It is simple, and delicious. It is delicious plain. It is delicious with a little lemon and chili flakes. It is delicious with an egg on top. It’s just delicious. So, I was very excited when I saw that you could slice a sweet potato length wise and toast it (yup, right in your toaster) and make avocado toast – without bread!
I made this for a few bread eating friends and they agreed, it’s delicious. It adds a nice nutty flavor. And, it’s fall and sweet potato everything is good. In case you were wondering, yes, it does taste delicious with nutella and berries as well as peanut butter and banana.
